Jam is the most widely bought fruit preserves. It is obtained by boiling a sweetened concentrate of partially crushed fruits, usually of one type, fresh fruit or pulp, with the addition of: sugar, pectins, organic acids (citric acid is an antioxidant) and possibly fruit juices.

The addition of juice such as beet juice can be used to enhance the color of the product. The production of jams on an industrial scale is carried out by the vacuum method, which allows for a short time to bring the juice and fruit mass to the required density and to reduce the loss of vitamins. In the process, the mass loses about 20% of water. The characteristic gel consistency of the jam is due to pectin compounds that swell in an acidic environment. High and low sugar jams can be found on store shelves. The former contain 25–60 g more fruit than fruits with a high sugar content - 25–50 g. Jams with a low sugar content contain about 35–40 g of sugar, and in sweeter ones - 60 g. Pasteurization is an additional protection against development unfavorable bacterial microflora.

 

Jam is a mixture of sugars, unconcentrated pulp of one or more fruits and water, brought to a suitable gel-like consistency. However, rosehip jam and raspberry, blackberry, blackcurrant, blueberry, and pitted redcurrant jam can be made in whole or in part from non-concentrated single fruit puree. Citrus jam can be made with whole fruit cut into strips and / or slices.

 

Jam is a product from a group of fruits of the same type, saturated with sugar, immersed in a thick sugar-starch syrup. The minimum amount of fruit for preparing 100 g of the product ranges from 50-60 g. Producers receive the product as a result of prolonged cooking (so-called frying) of whole or chopped fruits in a solution of sugar and water or on the basis of fruit juice, which ensures the preservation of the natural shape of the fruit. The process is based on the phenomenon of diffusion, that is, the migration of sugar from a solution with a higher concentration (syrup) into the fetal tissue. This is necessary to equalize the concentrations of liquid and fruit. The addition of starch syrup guarantees an increase in viscosity and prevents sugar crystallization during production.

 

A huge part of the territory of Ukraine is occupied by orchards with fruit-bearing plantations. The leaders are apples, peaches, apricots, cherries and plums. Among the berries, the first places in terms of the volume produced are taken by strawberries, wild strawberries.

 

This market continues to show upward dynamics. Autumn and winter are especially good times for these products to be sold, when fresh fruit becomes less available or less tasty. In winter, there are twice as many jams sold as in summer. Usually, exports of this product category are greater than imports.
