The tea bush (camellia) is one of the valuable cultivated plants that people have been using for almost 5000 years. After water, tea is the most consumed beverage in the world. Of these, 4502 thousand tons of raw materials were received. The largest tea importers in 2010 were the world leaders in tea consumption: Russia (182,000 tons), Great Britain (146,000 tons), the USA (111,000 tons), Pakistan, Egypt and the United Arab Emirates. According to the FAO, in 2016, the world produced 5.73 million tons of tea (black, green, etc.), and the world tea market was worth approximately US $ 14.45 billion. It is expected to grow in the coming years by 2024 and reach $ 21.33 billion.

 

Teas are sold in many forms - in the form of leaves, granules, packaged in bags (express) or instant. Thanks to the wide range, convenience and intensive advertising campaign, express teas are gaining more and more fans. Until recently, express teas were synonymous with poor quality products. Nowadays, tea bag products are starting to displace the loose leaf tea form from the market. Express tea sales are growing in all price segments. This trend is facilitated by factors such as: a fast pace of life, changes in production technology, improved quality and ease of use.

 

According to a study, up to 80% of adult consumers drink tea every day. The frequent consumption of this drink means that the tea market in Ukraine is growing rapidly. Among Ukrainian consumers, the most popular is black tea, although this trend is gradually changing towards green tea, the third most frequently consumed is herbal tea. The green tea segment performs very well. Due to the health benefits and diversity in the development of new flavors and aromas, green tea is likely to continue to attract more and more consumers. This is also confirmed by the strong tradition of tea drinking for almost all occasions, as well as the way of drinking tea as part of a healthy lifestyle. After all, tea infusion warms, relaxes, can promote weight loss and has health benefits (for example, it can support immunity and lower cholesterol). Due to its small amount of caffeine, tea is a mild stimulant that can reduce fatigue. Consumers who most often include tea infusions in their diet are women and people over 50. The growing fashion for healthy living encourages shoppers to look for natural ways to keep fit. Functional drinks such as invigorating, anti-inflammatory, relaxing, or containing antioxidants are becoming more and more popular. One example of such drinks is matcha - Japanese green tea powder. Turmeric is another healthy ingredient.

 

The main places for buying tea, respectively, are: specialty stores, large and small grocery stores.

 

Most often, tea bags are bought, which accounts for about 70% of sales. Most often it is drunk without additives or its taste is varied with lemon, sweetened with honey or sugar. Less commonly, milk, ginger, or fruit syrup is added.

 

Analysis of the significance of the factors determining the choice of tea made it possible to identify three groups of factors differing in the level of significance for the consumer. The first group includes taste and aroma. The second, less numerous, is health promoting properties, habits, form and convenience of brewing, price, opinion of friends and brand. In the group of factors, the least significant for the respondents are: the origin of tea and marketing factors.
